Baby Shower Cakes

Baby Shower Recipes

Cup Cakes Carrot Cupcakes

Tip - You can make your baby shower cakes in advance and freeze the un-iced cupcakes in their silicone cases.

Makes - 12

Ingredients

50g sultanas
50g Ready-to-Eat Dried Apricots (Roughly Chopped)
Zest of 2 Small Oranges (Finely Grated)
3tbsp Freshly Squeezed Orange Juice
Plus an additional 2tbsp for icing
200g Plain Wholewheat Flour
2 Level tsp Baking Powder
2 Level tsp Mixed Spice
75g Organic Seed Mix
40g Desiccated Coconut
125g Caster Sugar
2 Large Free Range Eggs
75ml Sunflower Oil
75ml Semi-Skimmed Milk
115g Carrots, Grated
115g Icing Sugar

Method

To start put the sultanas and chopped apricots in a bowl with the zest of 1 orange and 3tbsp orange juice and leave to one side for 20 minutes.

Heat the oven to 180C to 160C - Fan/Gas 4. Place 12 cupcake cases onto a baking tray and sift the flour, baking powder and mixed spice into a large bowl. Once done add the seeds and coconut to the mixture and stir to mix all the ingredients together.

In a separate bowl beat together the eggs, sugar and oil until the sugar starts to dissolve. Next add the the milk and pour in the dried ingredients (mixed spice, flour, baking powder, seeds and coconut) into the bowl; add in the grated carrot and soaked dried fruit.

Mix all the ingredients together with a large metal spoon until just mixed ( try not to over mix the cupcake ingredients or the cupcakes will turn out tough).

Once mixed spoon the mixture into the cupcake cases and bake for 20-25 minutes or until risen and golden in color. Take out of the oven and cool on a wire rack.

For the icing, mix together the icing sugar with enough orange juice to make sure you have enough icing to coat your cupcakes. Add the orange juice a teaspoon at a time to your icing sugar; this will allow you to determine the thickness of the icing coat.

Drizzle a little icing on to each cup cake and finish off with a little orange zest or add baby shower sugar shapes on top.

Teddy Bear Chocolate Teddy Cakes

Makes 12

Ingredients

100g Softened Butter
100g Caster Sugar

A Couple of Drops of Vanilla Essence
2 Eggs
100g Self Raising Flour
50g Milk Chocolate Drops
50g White Chocolate Drops

For The Icing

50g Softened Butter
150g Icing Sugar
2 Tablespoons Cocoa Powder

Method

Set the oven to 150C or Gas Mark 4 and place the paper cases into your baking tin. Add the butter, sugar and vanilla essence into a mixing bowl and beat together until nice and creamy.

Next add the eggs and beat the mixture again, once done sift in the flour and stir it into the mixture. The last step is to stir in the chocolate drops.

Once the mixture is complete spoon it into the cake cases with a dessert spoon until each case is three quarters full.

Bake for 10-15 minutes or until the cakes have risen and golden in color. Remove from oven and allow to cool for 5 minutes before placing the cakes on the cooling rack; allow the cakes to cool completely.

While the cakes are cooling down make the chocolate butter icing. Sift the icing sugar and cocoa into a bowl, adding the butter, then beating the ingredients together until lovely and smooth.

Once the cakes have cooled down spread them with the icing and use a fork to make the icing look like fur. Decorate them with the chocolate drops making ears, eyes and a nose on each cake.

Muffins Almond and Raspberry Muffins

Makes 8 Muffins

Ingredients

250g Self-Raising Flour
150g White Sugar
140g Flaked Almonds - Lightly Toasted
150ml Warm Milk
115g Melted Butter
2 Eggs - Beaten
375g Frozen Raspberries

Method

Using an electric whisk; or rub by hand
Mix together the sugar, flour and 105g almonds before adding the milk, melted butter and eggs.

Very gently fold the raspberries into the mixture; once done spoon the ingredients into eight muffin cases and sprinkle the remaining almonds over the top of the cakes.

Pop in the oven for 20-25 Minutes; then leave to cool down for 10 minutes before transferring them over to a wire rack.

Easy baby shower cakes that will go down a treat.

Baby shower duck Rubber Duckie Biscuits

Makes 20 Biscuits

Ingredients

275g Self Raising Flour, Plus a Little Extra For Dusting
1 Dessert Spoon Cinnamon (optional Extra)
100g Soft Light Brown Sugar
75g Butter, Cut into Pieces
1 Egg
2 Table Spoons Golden Syrup

Icing Ingredients

50g Softened Butter
150g Icing Sugar
2 Teaspoons Milk
A Couple of Drops Yellow Food Coloring (Optional)

Method

To start sift the flour and cinnamon into a bowl and stir in the sugar. Add the butter pieces and rub the mixture together until it resembles breadcrumbs.

Crack the egg into a measuring jug, add the syrup and beat with fork, once done add the flour mixture and stir into a ball. Put the dough into a plastic bag and allow to chill for one hour.

Whilst the dough is chilling, put the oven on to 170c or gas mark 3 1/2. Cut out 2 large sheets of baking paper to line the baking trays.

Sprinkle some flour onto the work top and place the chilled dough in the middle, roll out the dough to a thickness of 5mm (1/4 inch thick).

Once the dough is rolled out to the thickness required cut out 20 rubber duckie shaped biscuits.

Bake the biscuits for 10-15 minutes or until the biscuits have turned golden brown around the edges, then remove from the oven. Let the biscuits cool on the baking sheets for a couple of minutes, then transfer over to the cooling rack and allow to cool down completely.

While the biscuits are cooling start to prepare the butter icing, mix all the icing ingredients together in a small bowl with either a wooden spoon or hand held electric mixer.

Use a teaspoon to to spread the icing over the rubber duckie biscuits and decorate with small sweets, baby shower sugar shapes or use an icing pen to draw your desired design on the cookies.

This could be the date of your shower, your babies name or a simple thank you message to give to your friends and family to say thanks for coming - use the biscuits as great little favors or baby shower game prizes.
