Finger Food Free Recipes
Cheese and Courgette Muffin Mix
Makes 12 Delicious Muffins.
Delicious free recipes to make and bake.
Ingredients
- 175g Courgettes - Grated
- 200g Cheddar Cheese - Grated
- 250g Self Raising Flour
- 1 tspn Bicarbonate of Soda
- 1/2 tspn of Salt
- 7 fl oz Milk
- 1 Egg
- 4 Table Spoons Olive Oil
Method
Place your paper cases in a muffin tin and preheat the oven to gas mark 5, 190c.
Using a mixing bowl place the grated courgettes and cheese into the bowl and sift in the flour, salt and bicarbonate of soda, mix all the ingredients together.
Once done put the olive oil, egg and milk into a measuring jug and beat the ingredients well with a fork. Pour the mixture over the courgettes and cheese ingredients and stir until just mixed.
Once the ingredients is mixed together start to spoon the mixture into the muffin cases. Fill each muffin case so that it is nearly full.
Pop the muffins into your preheated oven and bake for 20-25 minutes or until the muffins have risen, have a golden color and are firm to touch.
Take out of the oven and allow to cool in their muffin cases for 10 - 15 minutes. Transfer over to the cooling rack.
Enjoy the muffins hot or cold.
Cornbread Delight
Makes 12
Cornbread can be used with so many different foods, it's great with cheese and pickles, on it's own with butter or with delicious tasty soups. Can be served hot or cold.
Ingredients
- One Knob of Butter For Greasing The Baking Tin
- 225g Plain Flour
- 200g Cornmeal
- 1 Tablespoon Baking Powder
- 1 Teaspoon Bicarbonate of Soda
- 1 Teaspoon of Salt
- 3/4 Pint Plain Yogurt
- 3 1/2 fl oz Milk
- 2 fl oz Maple Syrup
- 2 oz Brown Sugar
- 2 Eggs
- 2 oz Melted Butter
Method
Grease the baking tin all over with butter and set the oven to 180c - Gas Mark 4.
Sift your flour, baking powder, bicarbonate of soda, cornmeal and salt into a large mixing bowl and mix all the ingredients together.
Using another mixing bowl. Put the yogurt, maple syrup, milk, eggs and melted butter into the bowl and beat the ingredients with either a whisk or fork.
Pour your first bowl that consists of the dry ingredients into the wet mixture and mix them together, making sure not to over mix as the cornbread may become tough. Just stir enough so the ingredients resembles a batter like texture.
Once complete pour the mixture into the prepared baking tin and pop in the oven and allow to bake for 20-25 minutes or until the top is golden brown.
Test the cornbread with a skewer, poke the skewer into the middle and it should come out clean.
When the cornbread is cooked take out of oven and allow to cool in the tin for a couple of minutes. Tip the cornbread onto a cooling rack and allow to cool a little more, cut into 12 squares and serve either warm or cold.

Party Quiches - Free Recipes
These little quiches are great fun to make and can be filled with your favorite fillings. You
can prepare the quiches in advance and can be eaten hot or cold.
Ingredients
- 12 oz Ready Rolled Shortcrust Pastry - If frozen allow to thaw and take out of the refrigerator 15 minutes before using.
- Pinch of Salt
- 2 Spring Onions - Chopped
- 2 oz Cheddar Cheese - Grated
- 5 Cherry Tomatoes - Chopped
- 4 Slices Ham - Diced
- 7 fl oz Milk
- 2 Eggs
- Cooking Oil
- Plain Flour - For Dusting
Method
Using your patty tins, drizzle a little oil into the patty tin cups and smear the oil all over each one, set the oven to 220C - Gas Mark 7.
Once done sprinkle a little flour onto the kitchen work surface and unroll the shortcrust pastry. Flatten the pastry with the balls of your hands.
Using a cutter stamp out circles in the pastry and place the pastry circles into the patty tin cups, gently press the pastry down with your fingertips.
Next put the milk, eggs and salt into a mixing bowl and beat the ingredients with a fork.
Once beaten, place the spring onions, cherry tomatoes and ham all together in a separate bowl and mix. Spoon the ingredients into each patty tin cup using a dessert spoon.
Once all the ingredients has been spooned in pour some of the wet mixture (milk, eggs and salt) over each patty tin cup.
Sprinkle some grated cheese over the top of each one and bake for 20 minutes or until set and golden in color.
Enjoy the party quiches hot or cold.
